At least 21 days, but also up to 50 days, the pieces of meat are waiting to tenderize, to intensify their taste, to become juicy and creamy, that is, ready to impress you.
MATURE
This is what the pieces of meat that are maturing in our special refrigerator, placed in plain sight, fixed in the restaurant look like. With the beginning of the maturation process at 1-3 degrees C, the humidity of 80-90%, and ventilation, the percentage of water in the meat begins to gradually decrease. By dehydration, the meat becomes much tastier, because the flavors intensify, and by maturation, the enzymes in the meat break the muscle fibers, which will give a degree of tenderness difficult to obtain in a regular steak.
MATURATION BY DEHYDRATION
If you have ever wondered why the matured beef is more expensive, know that depending on the number of days it is kept to mature, the meat can lose up to a third of its weight. Also, after maturation, the pieces are cleaned on the outside, thus reaching perhaps even a 40% reduction in the initial weight. Basically, from a piece of ribeye with the bone of about 8 kg, after 40-50 days of maturation, 10 portions without the bone of 300 gr piece are obtained.
